Hiya, today it is time for some more cooking with this months first official episode of Bake Date with Lolli. This month I am going to show you my yummy recipe for delicious buttery Shortbread.
I have not made Shortbread in ages and then a couple months back I thought I really must have a go at this again. My first attempt, delicious as it was, was a little thick so I adapted it both in the recipe and the method and came up with what I think is a super easy yet super delicious Shortbread. So here is my Bake Date with Lolli Shortbread video:-
So as you can see it is really easy to make and the beauty is that the actual Shortbreads taste better as they age a little. A lot of things you make you really need to eat them pretty fast to get them at their best but these definitely get better the next day or so after. Anyway here are the photos of my finished Shortbread biscuits:-
Now of course with all Bake Date posts I will always add a written recipe for you so that if you just want a quick reminder it is all here for you.
6oz Plain Flour
2 1/2 oz Semolina or Ground Rice
6oz Butter
2 1/2oz Castor Sugar

Put into a bowl the Flour, Semolina and Butter

Rub together until dry ingredients all mixed into butter

Add Castor Sugar and kneed into a dough ball

“Roll” dough out into a circle of about 1cm thick. Place onto Baking Tray with parchment.

Make fork marks around edge and add fork piercings across surface

Put into fridge to cool for about 10mins and then cook in pre-heated oven at 160c for about 40mins

Remove from oven and cut into the triangles.

Sprinkle with Castor Sugar

Remove from tray and place onto cooling rack .

Lol! it made me hungry too, but I left the eating til the next day. I find shortbread improves by the next day at bit less crumble 🙂 Glad you enjoyed though and hopefully it made you feel like giving them a go 🙂
