So as is often the case my recipe is a Mary Berry recipe who is my baking idol. Her recipes are always so clear and seem to always work. Anyway lets get on with the baking so here is Bake Date with Lolli Chocolate Chip Cookies video:-

So as always I have a couple of photos for you:

Finally here is the recipe for this months Bake Date:

6oz Butter

12 oz Self Raising Flour

2 large eggs

7oz Castor Sugar

3 1/2 oz Chocolate Chips

3 1/2oz Chopped Nuts (I used another 3 1/2oz of Chocolate Chips instead)

So get the butter, sugar, flour and eggs mix together with a mixer for a few minutes til nice and smooth. Tip in your chocolate chips (you can do half chocolate chips and nuts if you prefer) and mix with a wooden spoon.

Take a baking tray and spoon on a large teaspoon of mix onto the tray. An average size tray should take about 8 heaps. Then lightly flatten the tops, you don’t need to be fussy, Then pop in the oven and cook at 180 for approx 20 mins. It will look quite pale still when ready with just a light browning at the edges. I have learnt if you leave it til it looks ‘biscuit’ coloured in the oven it is overcooked as they darken as they cool.

Lastly make sure you cool the tray between each batch, I run under cold water to instantly cool it rather than wait lol! Also note that as you do each batch the cook time will lessen as the oven is already warm so it cooks them quicker so make sure you keep an eye on them. The mixture should make 30 – 40 biscuits depending on the size. You could go larger and put less on the tray. I would not recommend smaller as it will just burn as they will be too thin etc.

So I hope you have enjoyed this months Bake Date and I will see you again soon, big hugs,
